Please meet Anne Marie Bonneau

Concerned with the devastating impact of plastic pollution on our oceans and wildlife, Anne Marie cut all plastic to speak of from her life in 2011. Because she stopped buying food packaged in shiny plastic packages, she began making more staples herself. This led her to her obsession with fermentation. She prepares—among many other foods—kimchi, dill pickles, kombucha, mead and ginger beer. She also traded in her store-bought active dry yeast for wild yeast and today bakes sourdough bread using her sourdough starter, which she named Eleanor. Anne Marie believes passionately that a lower impact lifestyle leads to a more enjoyable one filled with delicious, nutritious food.

Anne Marie blogs at The Zero-Waste Chef, and has been featured in Buzzfeed, Treehugger, Mashable and other publications. In addition to writing her blog, Anne Marie teaches fermentation and sourdough bread baking classes in Northern California. Her book "The Zero Waste Chef" was published in April, 2021.
